Late Night Hunger and a Few Pounds of Bacon

After a long week, and a bit of wine, some late night food was in demand. Pete’s old family friend had also just sent a bunch of delicious bacon from the east coast that I felt we needed to tap into, and with that, these tasty morsels were created.

Bacon & Blueberry Bruschetta with Peanut Butter, Homemade Apricot Preserves & Reduced Balsamic

I would say these would be a hit really anytime, and would also be great served in the morning. Be creative, the combinations are endless. Here however, is the recipe for the combo I came up with, as apricot and pork are a fantastic pair.

Ingredients:

  • A couple slices of good bread
  • A few strips of bacon
  • Apricot preserves
  • Crunchy peanut butter
  • A handful of blueberries
  • A good squeeze of lemon juice
  • A splash of reduced balsamic
  • A pinch of salt

Directions:

  • Cut bacon into small bits and fry in a skillet until its nice and crispy
  • Spread first with peanut butter, then preserves
  • Sprinkle with bacon and berries
  • Finish ‘er off with the lemon juice, balsamic and salt
  • Eat, drink water, and sleep…or make another round (we sure did)

The Importance of a Good Hor D’oeuvre.

Probably my favorite thing to make in the kitchen are small bites for entertaining purposes. I think its a combination of the-women-love-things-that-are-made-miniature in me, along with how satisfying it is to deliver something to your guests that is simple yet detail oriented and tasteful. It sets the tone for what’s to come. I always feel sad when I am at a catered event and the start falls short with plastic looking appetizers or plates that are just straight distasteful. A couple friends and I catered a wedding last summer for 180 people in a park with no electricity, running water, or kitchen. I can say with confidence that all of our starters were spot on and aesthetically beautiful. The key is using high quality ingredients that combine well together and not moving too fast or taking shortcuts. I encourage anyone with personal favorites to share them as well, as you can never have enough up your sleeve. Hope you are all enjoying the summer day and thank you for staying tuned…
